Natural colorings are food colorings obtained from natural resources. The pigments are mainly extracted from animal and plant tissues and microorganisms (culture), among which plant-based colorants account for the majority. Plant-based colorants are mainly extracted from the roots, stems, leaves, flowers and fruits of natural plants. Most of them are anthocyanins, carotenoids and flavonoids, which are bioactive substances and functional active ingredients in phytopharmaceuticals and health foods.
